Help Me Grow – Long Island is a proud partner of Bright By Text, a texting service that provides free tips, information, and resources to help all parents and caregivers give every child a bright beginning. In addition to receiving expert content from partners like PBS, Vroom, and Sesame Street, Long Islanders that sign up for the service will now also receive information about local resources and opportunities from Help Me Grow – Long Island. REGISTRATION INFORMATION

Patrons can register another patron if they have that patron’s library card. Caregivers with EMPL Library cards can register an out-of-district child that they care for with their library card and the child’s proof of age. If you are wait-listed for a program, you will be contacted if space becomes available.

All registrations are limited to one class per day and one on-going program. All registrations begin at 9:00 a.m. unless otherwise noted. Programs are limited to 25 children unless otherwise noted. Programs may be cancelled due to inadequate registration. Non-residents may inquire about availability one week prior to the program. If you have any questions about program guidelines such as age, grade or caregiver, call us first before arriving for a program. Our librarians are pleased to help you make your child’s library experiences positive and happy!

**PLEASE NOTE** Library cards can now be issued to children of all ages. Children must have an East Meadow Library card to register for programs. Most programs require prior registration.  Patrons may sign up over the phone by calling (516) 794-2570 ext. 6 and as of June 17th, 2019, online registrations will also be taken.

Simple Cooking
with the Baking Coach
(Kit program)
Tuesday, June 29 at 7 p.m.
A special 4th of July program – Red, White, and Blue Sandwich Cookies

Add something special to your 4th of July celebration. These red, white and blue sandwich cookies are sure to be a hit. They can be filled with white butter cream or vanilla ice cream.
Kits will be delivered to those within the East Meadow School District. When registering, please put in your address with the town. Please proof your address and your email.
The number of kits is limited. However, if you are on the waiting list, you can join us if you wish to gather your own ingredients.
 
The recipe is below.
Red White and Blue Sandwich Cookies
Yield: 15 – 17 Sandwich Cookies
Baking Temperature: 350 degrees
Baking Time: 15 minutes
 
Here is what
you need:
2 cups all-purpose flour
1 ¼ teaspoon baking powder
½ teaspoon table salt
1 ½ sticks unsalted butter, at room temperature
¾ cup granulated sugar
1 large egg at room temperature
1 teaspoon vanilla extract
Red and Blue food dye
 
Here is how you
do it:
 
Preheat your oven to 350 degrees.
 
Line two cookie sheets with parchment paper or grease.
 
In a medium-sized bowl, mix together flour, baking powder, and salt; set aside.
 
Using an electric mixer on a medium to low setting, in a large bowl, cream butter and sugars together until combined.
 
Beat in egg and vanilla. Slowly pour in flour mixture until a dough forms. Divide dough evenly into two portions and color with 3 drops of food dye or until you reach your desired shade. (If dough is sticky, place in fridge until firm enough to handle about 1 hour.)
 
Using your hands, roll cookie dough into 1 ½ -inch balls (about the size of a walnut.
 

Place cookies on prepared cookie sheet about 2 inches apart. Then using your hand press down and flatten slightly before baking. Bake in the oven for 15 minutes, or until lightly golden-brown at the edges. Cool for 5 minutes on minutes before transferring to cool on a wire rack.

 

Buttercream filling:
Here’s What You Need:
1 stick unsalted butter
2 cups confectionary sugar
½ teaspoon vanilla
1 teaspoon water
 
 

 

Here’s How You
Do It:
Mix together butter and shortening until well-blended – slowly add confectionary sugar until combined. Add vanilla and water mix at high speed until fluffy.
 
Turn one cookie upside down, and place a spoonful of frosting on top, then top with a cookie right side up! Repeat. Store in an airtight container in the fridge.

Cherry Pie!

As many of you cooking fans might have realized, I love pies! The Baking Coach has even told me that we cannot make a pie every month. Though I am not sure why this is true, I have listened to her. Now we are making my favorite pie, CHERRY PIE!!!
It’s my husband’s favorite also. He has been waiting for months.
And…I love stories. We will be telling a very short story on the “origins” of cherry pie. Might be a myth or a fairy tale.
Not so sure it is the truth. Involves Queen Elizabeth I and a kitchen.
 
Kits will be delivered to those within the East Meadow School District. When registering, please put in your address with the town. Please proof your address and your email.
 
Because we are transitioning back into the Library, we will not have a place for people to pick up kits. We are sorry.

RECIPE:
Cherry Pie
Prep Time: 1 hr. Servings: 8 slices
Here’s What You Need:
 
9 inch pie pan
2 2/3 cup all-purpose flour
1 cup butter blend or ½ unsalted butter + ½ cup vegetable shortening
1 teaspoon salt
2 tablespoons sugar
6 – 8 tablespoons ice cold water or orange juice (maybe up to 8, depending on weather)
1 can cherry pie filling
1 egg
 
Here is How You Do It:
Using your hands, rub the first four ingredients together until the mixture is crumbly and still has some larger chunks of butter/vegetable shortening. Make a well in the center of the flour/butter mixture; add to this approx. 2 – 3 tablespoons of ice water or orange juice. Gently mix the water into flour/butter mixture until a dough is formed.
 
Note: Depending on weather conditions or on the flour quality, you may need to add a little more water or flour to reach the desired dough consistency. This process can be performed with a hand- mixer or food processor. Knead the dough on a lightly-floured surface until it is smooth. Roll it into 2 balls, flatten into disks, wrap it in plastic wrap, and let it rest in the refrigerator for about an hour.
 
Preheat oven to 400 degrees
Remove one disk from the fridge and roll out dough large enough to cover the pie pan on a lightly-floured flat surface. Trim edges with a knife and using a fork puncture holes randomly about 3 or 4 times to vent the crust.
 
Pour the cherry filling into a pie pan lined with pie crust.
 
Roll out the second disk of dough and use as the top crust, trim the edges, and properly vent the pie by cutting a hole in the center and slits all around the top of the pie. Brush with an egg wash if desired (1 egg slightly-beaten with water) place pie on top of a cookie sheet into a 400-degree oven for about 45 minutes or until lightly golden-brown.
 
OR:
To make lattice top: Roll out the rest of the dough as above, and cut into 3/4-inch-wide strips. On a lightly-floured cookie sheet, place half the dough strips 1/2-inch apart, then weave the remaining strips through them in a perpendicular, alternating an over/under pattern. Slide lattice off the cookie sheet directly on top of the pie. Trim lattice strips, leaving a 1/4-inch overhang. Tuck ends of the strips under the edge of the bottom crust, then crimp the edge. Continue as directed above with the egg wash if desired and then bake as noted.
